Thai Inspired Pasta Salad
SAY IT WITH ME: No more predictable, basic pasta salads! Congratulations: you’ve found the one that will turn heads. Fresh herbs & veggies abound. AND a customizable, satisfying sauce wakes up the tastebuds and makes you go in for a second bite immediately. It boasts versatility as its finest: this can be made vegan, vegetarian, pescatarian or add in your favorite protein easily (I’d recommend tofu cubes or satay chicken bites if you go this route). MVP Ingredients: Fresh herbs & a flirty, cheat of a sauce.
Kitchen Weapon of Choice: Your favorite knife (we chopping a lot, friends)
Ingredients
1 box of pasta of choice, we recommend a medium to small shape
1 C red pepper, chopped
1 C tri-color carrots
1/3 C fresh basil
1/3 C fresh cilantro
1/3 C fresh mint
1/3 C roughly chopped honey peanuts
1 jar of any ginger based dressing
2-3 tablespoons of peanut butter
To taste: soy sauce, garlic, rice wine vinegar, sriracha, honey or agave
Directions
Cook pasta as directed, rinse with cold water until at least room temperature.
Chop all veggies and herbs.
Mix dressing and peanut butter. Add other options to your liking, with lots of taste tests in between!
Mix it all up! Serve cold.
