Sneaky Mashed Potatoes

I get so. much. joy. from watching someone taking a bit of something and then their eyes rolling back in their head. This recipe will achieve this for you. As your eaters approach their first bite, they see snow white mashed potatoes and assume they know exactly what they’re about to taste as they have a hundred times before. But what hits their tongue is the gentle depth of familiar herbs and the richness of butter. BUT WHERE ARE THEY? They taste, but they don’t see. These are my sneaky mashed potatoes that I’m tickled to share with you. You want them, your humans want them and I want them again writing this. Enjoy, favorites!

MVP Ingredients: Heavy cream infused with fresh herbs
Kitchen Weapon of Choice: Fine mesh strainer

Ingredients

  • 4-6 white potatoes, peeled and chopped

  • 3-4 sprigs of each: fresh rosemary, parsley, and sage

  • 3-5 cloves of garlic

  • White pepper (or course ground black peppercorns) to taste

  • Salt to taste

  • 3/4 C butter

  • 3/4 C heavy cream

Directions

  1. Boil potatoes until soft.

  2. Bring cream, butter, herbs, garlic and spices to a low simmer. Strain out aromatics.

  3. Mash potatoes while adding the cream and butter mixture to desired texture.

  4. Serve warm with a pat of butter on top.
