Cardamom Vanilla Simple Syrup
Ah, cardamom. We love it in chai. We love it in curry. It’s the bisexual and flexible spice. It can go either way: savory or sweet. It’s high time it has its solo spotlight. The way it elevates coffee, tea and cocktails is quite sexy. Take heed: Any simple syrup, especially with higher sugar content, can become oversaturated, causing sugar crystals to form when stored in the fridge. It is still safe to consume as long as your nose still likes the way it smells. Please remember, I am not a big measurer so ingredients below are approximations and absolutely should do you. MVP Ingredients: Cardamom Pods
Kitchen Weapon of Choice: Mortar & Pestle
Ingredients
1 C Sugar
1 C Water
5-6 cardamom pods, beaten up and opened (or 2-3 tsp decorticated seeds)
Pinch of salt
Drops of vanilla extract OR half a vanilla bean pod, scraped out
Directions
Bring ingredients to a boil, then let cool.
Add vanilla as syrup is cooling.
Pour mixture through fine mesh strainer into bowl to remove pods and seeds.
Store in an air tight container in the fridge.
